Although it is recommended to soak nuts to make them more easily digestible, this practice is not suitable for the apricot kernels, as this would reduce the levels of vitamin B17. Nuts can be eaten alone or in combination with dried fruits, which would somewhat soften their specific bitter taste. Add to salads, casseroles or muesli. Consume no more than 8 kernels per day.

It contains phosphorus, iron, magnesium and dietary fiber. Kernels are rich in omega-6 fatty acids, vitamins B15 and B17, A and E, niacin and phytosterols. Apricot kernels have good antioxidant properties due to the high content of phenols and alpha tocopherol - a fat-soluble form of vitamin E, which is easily digestible. Besides nutrients, apricot kernels contain the dangerous glycoside called amygdalin. Therefore Food Standards Agency recommends to consume between 5 and 8 apricots per day.
